The Riripa washing station is located along the border of Bale Mountain forest in Nensebo, with dense forest shade and abundant rainfall. About 742 smallholder farmers in the area deliver handpicked coffee cherries to the organic-certified washing station.

This lot was sourced by SNAP Trading & Industry PLC, a quality-focused exporting company founded by Negusse Debela, who had a revelatory cup of specialty coffee abroad. Armed with an in-depth knowledge of supply chains, he returned home to set up SNAP Trading in 2008, working with multiple washing stations in the region.

Coffee cherries are hand-sorted upon delivery, and depulped using a traditional Agaarde disc pulper. The coffee is then sorted by density, and soaked in fermentation tanks for up to 72 hours. Following that, the coffee is washed in channels and sorted once again by density. The higher density beans are separated as higher grade lots.

After fermentation, the coffee is soaked in clean water for 2 hours, and then dried on raised bed. The parchment is piled in layers 2cm in height, and dried over 14 days. Here, the coffee is hand-sorted to remove any visible defects. Once processing is completed, the coffee is moved to SNAP's pristine dry mill, before export.

This coffee is roasted for filter; and is recommended for brewing using the V60, Chemex, Clever or other drip coffee makers.
