From the much-beloved Guji region in Ethiopia, this natural-processed coffee is cultivated in the Hambela District, with mineral-rich volcanic soils and ample rainfall.
Only recently has coffees from Guji been distinguished from the neighbouring Sidamo and Yirgacheffe producing regions. They quickly gaining international recognition, due to their immense quality and unique profiles.
This lot is sourced and managed by Sibu Coffee Producers and Exporters, which owns 3 washing stations, supporting 20 permanent employees and 180 season workers. Sibu provides training and agronomic support, teaching farmers how to harvest ripe cherry, proper cultivation and fertilising techniques. This equips farmers with the skills to produce excellent quality cherries.
During the harvesting season, farmers selectively handpicked ripe cherry and deliver their harvests to Hambela station daily. At intake, the cherries are inspected and floated, to remove any floaters.
This natural-processed lot is then laid to dry on raised beds, frequently raked to ensure even drying. The coffees are covered at the hottest part of the day and at night, to prevent condensation.
To encourage high-quality production, Sibu pays farmers an additional bonus after their coffee is sold as parchment. This means an additional 30% of the profit from coffee sales goes to contributing producers, which incentivises farmers to continually produce higher quality coffee.
