Coming from a long line of coffee producers, Andres Salaverria is the fifth-generation in the Salaverria family to run the family business. Andres' grandfather, Jose Antonio Salaverria Sr., always instilled a sense of teamwork in the family, and consider their staff to be their biggest asset. The love and passion for coffee shows in the coffees that the family produces.

With many farms under their care, the family invested in a central mill, Beneficio Las Cruces in 1990, making improvements to both the coffee processing mills as well as the crops produced. They invested in depulping machinery that reduced the need for larger fermentation tanks, in turn reducing water usage. In efforts to maintain soil sustainability, they use organic waste, such as coffee pulp, fish, meat, chicken dung, bones and plants, to produce fertiliser, as a means to regenerate the soil and invigorate the plants.

In 2011, the family began to separate the lots based on several factors such as altitude, quality, and growing conditions. They also experimented with processing to produce better quality. This Las Nubes lot is one of those of lots. Comprising of the Red Bourbon varietal, the honey processing method was chosen to compliment the mature homogenous ripeness. Natural lots are not exactly commonplace in Central America, but the Salaverria family has been doing it well for a long period.

It starts off with selective handpicking by professional pickers that have been working at the farm for over 10 years, choosing only deep blood red cherries of uniform color, which is no mean feat considering the volume they pick. The coffee is depulped with most mucilage left on the parchment, and then dried on raised beds. This takes 30 days to dry, and great care is put in to ensure even drying.

This coffee is roasted for filter; and is recommended for brewing using the V60, Chemex, Clever or other drip coffee makers.
