Produced by Jose Uber Quintero, this coffee comes from the El Danubio farm, located in Tolima, Colombia. Jose and his wife Deyanira Orozco manage the 6 hectare farm, out of which 4 hectares are dedicated to coffee. The rest of the farm sees a selection of crops such as plantain, casaba, banana and lemons. 

Tolima is one of the 32 departments of Colombia. Sitting in the Andean region, the area enjoys a variety of mountainous temperatures, also known as microclimates, that are ideal for coffee production. The volcanic activity also means the region is well-suited for agriculture.

This coffee processing method is termed Natural-Lactic, which starts off with hand-picked cherries - choosing only the ripest ones - followed by a round of hand-sorting. The coffee then undergoes dry anaerobic fermentation for 36 hours in sealed GrainPro Bags, at 20 degrees Celsius. In this environment, the microbes feed on carbohydrates and sugars from the mucilage. This leads to a higher concentration of lactic acid, that contributes to the complexity in the cup. The coffee is then sun-dried on raised beds, until the coffee reaches a moisture content of 10.5%.

The Geisha varietal is one of the most sought-after varietals in specialty coffee, having been first discovered in Absinia, Ethiopia in 1931. It was first planted in Panama for the first time in 1963, and subsequently in Colombia in 2005. A typical tasting profile of the Geisha varietal will comprise of floral aromas, alongside brighter, fruit-forward flavour notes, coupled with a balanced mouthfeel.

In this delicious Geisha lot from Jose Quintero, we are getting a flavour profile with gentle florals reminding us of jasmine, along with flavour notes of ripe mango and and a citric orange finish. The body is round and accompanied by a deep cane sugar sweetness.
