Mountain Water Decaf is a decaffeination process that does not use chemicals, but instead, clear water from Pico de Orizaba, the highest mountain in Mexico. The result is an organically-certified coffee that is 99.9% caffeine-free.
The GRAPOS (Grupo de Agricultores Positivos S.P.R.) organisation was founded in 2007, to provide producers in the Chiapas region with the necessary guidance to produce high quality coffee. This comes in the form of technical assistance, free seedlings to replace damaged trees, in addition to other educational programs.
Initially comprising of 90 producers, GRAPOS has expanded to 2,708 producers today - all smallholder farmers growing coffee in the upper reaches of the mountains in the Chiapas region that borders the El Triunfo Biosphere Reserve, which explains the rich biodiversity in the area.
During harvest, the handpicked cherries are sorted for quality to remove defects, then de-pulped and fermented in water to breakdown the exterior mucilage. Once complete, the coffee is rinsed and spread evenly on cement patios to dry in the sun, until the ideal moisture content is reached.
