Mountain Water Decaf is a decaffeination process that does not use chemicals, but instead, clear water from Pico de Orizaba, the highest mountain in Mexico. The result is an organically-certified coffee that is 99.9% caffeine-free.
The estate, Ek Balam Productores de la Estrella del Jaguar, was founded in 2019 on three main values: improving quality of life for coffee producers, spreading coffee from the region to international markets, and conserving natural and historical resources.
Today, the organisation is comprised of about 1054 smallholder producers. Located in Chiapas in the southern reaches of Mexico, farmers in the region enjoy the natural benefits of the El Triunfo Biosphere Reserve and the Sierra Madres Mountain Range, with rich biodiversity and healthy soils.
During harvest, the handpicked cherries are floated and sorted to remove defects, then de-pulped and fermented in water to breakdown the exterior mucilage. Once complete, the coffee is spread evenly on cement patios to dry in the sun, regularly raked for even drying.
The Mountain Water Process starts by immersing the green coffee in water to extract the caffeine content. The water preserves the soluble flavour components of the coffee, retaining its original characteristics. The water is passed through a filtration system that removes the caffeine, and reintroduced to the beans, retaining its original taste.
