Coming from a long line of coffee producers, Andres Reyes Hernandez operates a four hectare farm in Intibuca, Honduras, growing the Red Catuai varietal. At 1700 metres above sea level, the farm sees an annual production of 45 bags. Andres' wife, Teresa and their three kids assist with farm operations, as to keep the production cost low.

In Honduras, there is seldom enough infrastructure to maintain lot separation all the way to export. Small holder farmers typically will have to combine their lots with other producers in the region, as to create enough volume for large millers to accept and process their coffee. This results in a more generic regional product, and the farmer becomes anonymous.

This is where the work of Pozo Negro shines. Andres Hernandez's maternal grandmother was one of the first coffee producers in Pozo Negro, a group of producers who came together to learn and share knowledge. Located in the Masaguara municipality in Intibuca, the group now consists of 60 producers. Electing a chairman yearly, they hold regular meetings to support each other and improve the quality of their coffees, from implementing specialty cultivation methods to improving picking and processing quality.

By reinvesting in their infrastructure, from wet mills to drying facilities, the Pozo Negro collective is able to improve traceability and separation of high quality micro-lots. This means that as consumers, we are able to enjoy a unique cup that represents the micro-climate of the farm and the efforts of the farmer. The individual producers are also able to enjoy higher premiums, which make coffee farming a more sustainable option, where they are able to reinvest in their production and improve quality.

The result is a coffee with softer acidity and fruit notes, and enhanced complexity. This is a fruit-forward, balanced coffee that has great structure and sweetness, along with a creamy body.

Pro Tip:

  • This coffee is roasted for filter; and is recommended for brewing using the V60ChemexClever or other drip coffee makers.
