Produced by small-holder farmers from Tablón de Gomez, this coffee comes from Nariño, in Southwest Colombia. With high elevations of over 2000 meters above sea level, coffee production in this region is challenging, but at the same time, highly-rewarding when done well, as seen in this sweet and clean cup.
Nariño is located near the equator, with warm tropical days and cold nights which makes for slower maturation of the coffee cherries. Most producers in this region grow coffee in small farms of less than 2 hectares, with the mountainous terrain and remote location providing a challenge to transport coffee.
Through the efforts of Terra association and Cafes Especiales de Nariño Cooperative, a cooperative founded in 2012 to improve sustainability of coffee production in the region, it is now easier for us to taste the fruits of their labour.
Harvest is typically done by each family or with the help of neighbours, with some larger producers managing their own self-sufficient wet-mills and patios for drying coffee. After the coffee cherries are picked, they are pulped and left to ferment for 12-48 hours. With frequent rain in this region, coffees may take about 20 to 25 days to dry on the patios.
