This delicious decaf comes from Popayan, from the department of Cauca in Colombia. It is decaffeinated using a unique process called Sugar Cane Decaffeination, where the caffeine is extracted from the coffee with a by-product of sugar cane and water. This creates a cup that is almost caffeine-free, yet retains the sweetness and inherent characteristics of the origin.
The green coffee is first put into a steam chamber where the silver skin is removed from the bean. The coffee is then submerged in spring water until the saturation point, and then sent to the extractors. Here, the beans are soaked in the sugar cane extract for 8 hours, removing the caffeine content. The decaffeinated coffee is then dried in a chamber to reduce the moisture.
The Popayan region is sheltered by the Andes mountain range, which creates a unique climate for growing exceptional coffee. Over 65 producers contribute to this program, and maintain a long-term relationship where the focus is on quality. Farmers can receive up to 20% premiums above the market price for their cherry, based on quality assessment.
